Instructions:

  1. Slice the zucchini: Cut the zucchini diagonally into slices about 1/4 inch (0.5 cm) thick. Place them in a large bowl, season with salt, black pepper, and olive oil. Toss well.
  2. Sauté the zucchini: Heat a large skillet over medium heat and add a drizzle of olive oil. Sauté the zucchini slices until golden brown on both sides.
  3. Prepare the yogurt sauce: In a large bowl, whisk together the Greek yogurt, eggs, flour, baking soda, and a pinch of salt.
  4. Assemble the gratin: In a baking dish, arrange a layer of zucchini slices. Sprinkle with oregano, then top with the crumbled feta cheese and sprinkle with dill. Arrange another layer of zucchini slices over the cheese.
  5. Pour the yogurt sauce: Pour the yogurt sauce evenly over the zucchini.
  6. Bake the gratin: Preheat the oven to 350°F (180°C) without the fan on. Bake the gratin on the lower rack until the sauce is set and golden brown, about 20-25 minutes.
  7. Serve: Cut the gratin into squares and serve warm.

Tips:

  • For a richer flavor, use full-fat Greek yogurt instead of plain Greek yogurt.
  • You can also add other vegetables to the gratin, such as thinly sliced onions, bell peppers, or mushrooms.
  • Serve the gratin with a side salad or crusty bread.

Enjoy!
