Instructions:
- Slice the zucchini: Cut the zucchini diagonally into slices about 1/4 inch (0.5 cm) thick. Place them in a large bowl, season with salt, black pepper, and olive oil. Toss well.
- Sauté the zucchini: Heat a large skillet over medium heat and add a drizzle of olive oil. Sauté the zucchini slices until golden brown on both sides.
- Prepare the yogurt sauce: In a large bowl, whisk together the Greek yogurt, eggs, flour, baking soda, and a pinch of salt.
- Assemble the gratin: In a baking dish, arrange a layer of zucchini slices. Sprinkle with oregano, then top with the crumbled feta cheese and sprinkle with dill. Arrange another layer of zucchini slices over the cheese.
- Pour the yogurt sauce: Pour the yogurt sauce evenly over the zucchini.
- Bake the gratin: Preheat the oven to 350°F (180°C) without the fan on. Bake the gratin on the lower rack until the sauce is set and golden brown, about 20-25 minutes.
- Serve: Cut the gratin into squares and serve warm.
Tips:
- For a richer flavor, use full-fat Greek yogurt instead of plain Greek yogurt.
- You can also add other vegetables to the gratin, such as thinly sliced onions, bell peppers, or mushrooms.
- Serve the gratin with a side salad or crusty bread.
Enjoy!
