  • 1/2 bunch fresh dill, finely chopped
  • Salt
  • Black pepper
  • Paprika
  • Dried dill

Instructions:

  1. Place the beans in a pot and cover with cold water. Fill the pot to the top.
  2. Turn on the heat and bring to a boil.
  3. Discard the first water, add fresh water, and bring to a boil again.
  4. Add the onion, carrots, celery, and stir.
  5. Reduce heat and simmer for 30 minutes.
  6. Add the red bell pepper, tomatoes, salt, black pepper, paprika, dried dill, and half of the fresh dill.
  7. Add olive oil and stir.
  8. Simmer the beans until fully cooked over low heat.
  9. Turn off the heat.
  10. Sprinkle with the remaining fresh dill.
  11. Serve with hot peppers and vinegar on the side if desired.
