Instructions:
Cook the tripe:
- Place the tripe in a pot with water and bring to a boil. Reduce heat and simmer for at least 1 hour, skimming off any foam that forms.
- Remove the tripe from the broth and chop it into small pieces. Strain the broth.
Prepare the roux:
- In a saucepan, heat the butter and a little olive oil. Add the flour and cook for 30-40 seconds. Add the paprika and stir.
- Gradually add the fresh milk, whisking constantly. Then, add some of the tripe broth.
Season the soup:
- Add salt, chopped tripe, and stir. Bring to a boil, then reduce heat and simmer for 10 minutes.
Prepare the garlic with vinegar:
- In a separate bowl, combine the chopped garlic and vinegar.
Serve:
