Instructions:

Cook the tripe:

  1. Place the tripe in a pot with water and bring to a boil. Reduce heat and simmer for at least 1 hour, skimming off any foam that forms.
  2. Remove the tripe from the broth and chop it into small pieces. Strain the broth.

Prepare the roux:

  1. In a saucepan, heat the butter and a little olive oil. Add the flour and cook for 30-40 seconds. Add the paprika and stir.
  2. Gradually add the fresh milk, whisking constantly. Then, add some of the tripe broth.

Season the soup:

  1. Add salt, chopped tripe, and stir. Bring to a boil, then reduce heat and simmer for 10 minutes.

Prepare the garlic with vinegar:

  1. In a separate bowl, combine the chopped garlic and vinegar.

Serve:

  1. Serve the tripe soup hot, adding garlic mixture and cayenne pepper to taste.
