Ingredients:

  • 300 g (10.6 oz) canned tomatoes

  • 100 g (3.5 oz) mushrooms (finely chopped)
  • 1 red bell pepper (julienned)
  • 1 green bell pepper (julienned)
  • 1 carrot (sliced)
  • 1 onion (thinly sliced into half-moons)
  • 2 potatoes (cubed)
  • 2 garlic cloves (thinly sliced)
  • 3 eggs
  • Salt
  • Black pepper
  • Paprika
  • Savory
  • Oil

Instructions:

  1. In a large bowl, combine the mushrooms, bell peppers, onion, carrot, and garlic. Season with salt, black pepper, paprika, savory, and oil. Mix well to coat everything.
  2. Take 3 clay pots. Place some of the tomatoes (evenly distributed) on the bottom of each pot. Then add the potatoes. On top of the potatoes, distribute the seasoned vegetables and press down firmly. Finally, distribute the crumbled cheese. Put the lids on the clay pots. Place in the oven and turn on to 180 degrees Celsius (350 degrees Fahrenheit), without a fan, in the middle of the oven, and bake for 90 minutes.
  3. After 90 minutes, remove the clay pots from the oven and place one egg in each pot. Return to the oven to bake the egg.
  4. Sprinkle the finished casseroles with finely chopped parsley.
