Recipe for: Syrupy Pastry with Turkish Delight (Lokum)
Ingredients:
For the pastry:
- 500g filo pastry sheets
For the filling:
- 300g walnuts, finely chopped or ground
- 300g Turkish delight, each piece cut into 4
For brushing the pastry:
- 2 eggs
- 200g sugar
- 100ml oil
- 200g yogurt
- 120g flour
- 1 teaspoon baking powder
For the syrup:
- 400g sugar
- 800ml water
- Juice of half a lemon
- 1 ampoule liquid vanilla

Instructions:
Make the syrup:
- In a saucepan, combine the water and sugar. Stir until the sugar dissolves. Bring to a boil and simmer for 15 minutes. Remove from heat, add lemon juice and vanilla. Stir and let the syrup cool completely.
Prepare the pastry mixture:
- Combine the flour and baking powder. In a large bowl, whisk together the yogurt, oil, sugar, and eggs. Gradually add the flour mixture and whisk until a smooth batter forms.
Assemble the pastry:
- Take one filo pastry sheet and brush with 2 tablespoons of the pastry mixture. Place another sheet on top and brush with 2 more tablespoons. Place walnuts and Turkish delight pieces along the wide end of the pastry and roll it up. Place the roll in the center of a greased baking tray and coil it into a snail shape. Repeat with the remaining pastry sheets. Pour the remaining pastry mixture over the top.
Bake:
- Bake in a preheated oven at 180°C (350°F) for about 35-40 minutes, or until golden brown.
Soak in syrup:
- Pour the cooled syrup over the hot pastry. Let it cool completely and refrigerate for at least 2 hours. Best served the next day.
