  • 8 red bell peppers, roasted
  • 3 eggs
  • 200g (7 oz) grated cow’s cheese
  • Flour for coating
  • Salt
  • Oil for frying
  • Parsley, chopped

Instructions:

  1. Using a knife, cut the peppers open on one side. Remove the seeds and membranes.
  2. In a bowl, combine the grated cheese, eggs, and chopped parsley. Mix well.
  3. Place one pepper on a cutting board. Spoon some of the filling onto one end of the pepper and roll it up carefully. Repeat with the remaining peppers.
  4. Add 1-2 teaspoons of salt to the flour and mix.
  5. Coat the peppers in the flour and fry them in hot oil until golden brown on both sides.
  6. Remove the peppers to a paper towel-lined plate to drain any excess oil.
  7. Serve the peppers with your choice of side dish.
