Instructions:
- Using a knife, cut the peppers open on one side. Remove the seeds and membranes.
- In a bowl, combine the grated cheese, eggs, and chopped parsley. Mix well.
- Place one pepper on a cutting board. Spoon some of the filling onto one end of the pepper and roll it up carefully. Repeat with the remaining peppers.
- Add 1-2 teaspoons of salt to the flour and mix.
- Coat the peppers in the flour and fry them in hot oil until golden brown on both sides.
- Remove the peppers to a paper towel-lined plate to drain any excess oil.
- Serve the peppers with your choice of side dish.
