Ingredients:

  • 10 bell peppers (5 green and 5 red), washed, seeded, and split at the bottom

For the filling:

  • 1 pound (500 g) ground beef
  • 9 oz (250 g) rice, rinsed
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 1/4 cup (6 g) finely chopped parsley
  • Salt to taste
  • Black pepper to taste
  • Paprika to taste
  • Savory (such as oregano or thyme) to taste
  • Olive oil

For the white sauce:

  • 17.6 oz (500 g) plain yogurt
  • 2 egg yolks
  • 1 tablespoon all-purpose flour
  • Salt to taste

Instructions:

Preparing the peppers:

  1. In a heated pan with olive oil, sauté the ground beef, breaking it up into small pieces, until it is no longer pink.
  2. Add the onion and carrots to the ground beef and continue sautéing for 2-3 minutes.
  3. Add the rice, stir, and cook for another minute.
  4. Pour in about 2 cups (500 ml) of water, season with salt, black pepper, paprika, and savory.
  5. Reduce the heat and simmer the filling until the rice has absorbed all the water.
  6. Remove from heat and stir in the chopped parsley.
  7. Fill the peppers with the prepared filling and arrange them in a baking dish.
  8. Pour water into the dish halfway up the peppers.
  9. Sprinkle the peppers with a little salt and olive oil.
  10. Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, for about 60 minutes.

Preparing the white sauce:

  1. In a saucepan, combine the yogurt, egg yolks, flour, and salt to taste.
  2. Place the saucepan over medium heat and whisk until the sauce thickens slightly.
  3. Gradually add some of the sauce from the baked peppers, whisking constantly.
  4. Bring the sauce to a simmer and then remove it from the heat.

Serving:

  1. Serve the peppers drizzled with the white sauce.
