- 1/4 cup (6 g) finely chopped parsley
- Salt to taste
- Black pepper to taste
- Paprika to taste
- Savory (such as oregano or thyme) to taste
- Olive oil
For the white sauce:
- 17.6 oz (500 g) plain yogurt
- 2 egg yolks
- 1 tablespoon all-purpose flour

Instructions:
Preparing the peppers:
- In a heated pan with olive oil, sauté the ground beef, breaking it up into small pieces, until it is no longer pink.
- Add the onion and carrots to the ground beef and continue sautéing for 2-3 minutes.
- Add the rice, stir, and cook for another minute.
- Pour in about 2 cups (500 ml) of water, season with salt, black pepper, paprika, and savory.
- Reduce the heat and simmer the filling until the rice has absorbed all the water.
- Remove from heat and stir in the chopped parsley.
- Fill the peppers with the prepared filling and arrange them in a baking dish.
- Pour water into the dish halfway up the peppers.
- Sprinkle the peppers with a little salt and olive oil.
- Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, for about 60 minutes.
Preparing the white sauce:
- In a saucepan, combine the yogurt, egg yolks, flour, and salt to taste.
- Place the saucepan over medium heat and whisk until the sauce thickens slightly.
- Gradually add some of the sauce from the baked peppers, whisking constantly.
- Bring the sauce to a simmer and then remove it from the heat.
Serving:
- Serve the peppers drizzled with the white sauce.
