Ingredients:
- 700g pork ribs
- Salt
- Black pepper
- Chili pepper
- 1 bunch fresh spring onions, finely chopped
- 2 garlic cloves, thinly sliced
- 10g ginger, peeled and thinly sliced
- 40ml soy sauce
- 60ml white wine
- 50g honey
- 10ml vinegar
- 200ml water

Instructions:
- Cut the ribs and season them with salt and black pepper. Rub the spices in well.
- Put a little oil in a preheated frying pan. Add the seasoned pork ribs and sear until golden brown.
- Once the ribs are seared, reduce the heat and add the chopped garlic and ginger. Stir to release the aroma. Add a little chili pepper and stir.
- Add the white wine, soy sauce, vinegar, and honey, and stir. Add the water and bring to a boil.
- Let the ribs simmer for about 10 minutes, basting them with the sauce and turning them occasionally.
- After 10 minutes, the sauce will start to reduce. Add the spring onions and stir.
- Turn off the heat and transfer the ribs to a baking dish. Pour the sauce from the pan over them.
- Bake in a preheated oven at 180 degrees Celsius, in the lower part of the oven, without a fan, for 30 minutes.
- Once you take the ribs out of the oven, coat them well in the sauce so that it sticks to them.

Tips:
- You can use any type of pork ribs for this recipe.
- If you don’t have white wine, you can use chicken broth or water.
- You can adjust the amount of chili pepper to your taste.
- For a thicker sauce, you can add a cornstarch slurry to the pan before adding the water.
- Serve the ribs with your favorite sides, such as rice, potatoes, or vegetables.
