Ingredients:

  • 26 oz (750 g) ground beef
  • 1 egg yolk
  • 1 small onion, finely chopped
  • 1/2 bunch parsley, finely chopped
  • 3 tablespoons breadcrumbs
  • 1 egg white
  • Salt
  • Black pepper
  • Paprika
  • Savory
  • 2 carrots, boiled and sliced lengthwise
  • 3 dill pickles, sliced lengthwise
  • 3 hard-boiled eggs, halved
  • 28 oz (800 g) potatoes, peeled
  • 5 fl oz (150 ml) fresh milk
  • 1.7 oz (50 g) butter

Instructions:

Boiling the Potatoes:

  1. Place the potatoes in a pot, cover with water, and bring to a boil.
  2. Boil until the potatoes are tender.

Seasoning the Meatloaf:

  1. While the potatoes are boiling, season the ground beef.
  2. In a large bowl, combine the ground beef, onion, egg yolk, parsley, breadcrumbs (reserve some for sprinkling), salt, black pepper, paprika, and savory.
  3. Mix well until the ingredients are evenly distributed.

Shaping the Meatloaf:

  1. Spread the seasoned ground beef mixture onto a sheet of wet parchment paper.
  2. Arrange the halved hard-boiled eggs, carrot slices, and dill pickle slices in a row along one edge of the meat mixture.
  3. Carefully roll up the meat mixture into a log, pressing the ends to seal.
  4. Transfer the meatloaf to a baking dish lined with parchment paper.
  5. Brush the top of the meatloaf with the beaten egg white and sprinkle with the remaining breadcrumbs.

Baking:

  1. Preheat the oven to 350°F (180°C) without fan convection and place the baking dish in the lower rack of the oven.
  2. Bake for about 50 minutes.

Preparing the Potato Mash:

  1. Drain the cooked potatoes and return them to the pot.
  2. Add the fresh milk and butter to the potatoes.
  3. Season with salt and mash until smooth and creamy.

Serving:

  1. Slice the meatloaf into individual portions.
  2. Serve the Stefan’s Roll with fluffy potato mash on the side.
