Instructions:
- Slice the mushrooms thinly, the onion into half-moons, the carrot into juliennes, the zucchini into juliennes, the peppers into juliennes, the cabbage into thin strips, and the garlic into thin slices.
- Add a teaspoon of salt to boiling water and cook the rice noodles for 5 minutes. Drain the cooked noodles in a colander and cool them with cold water. Add a little oil and mix to prevent them from sticking.
- In a preheated pan over high heat, add a little oil and the chopped vegetables. Sauté the vegetables for a short time on high heat, stirring occasionally. Add the garlic to the sautéed vegetables and season with salt and pepper. Stir and remove the vegetables from the pan.
- Return the pan to the heat and add a little oil. Then fry the egg, stirring constantly until it is broken into small pieces. Return the vegetables to the pan and add the noodles. Finally, add the soy sauce and sweet chili sauce. Stir and turn off the heat.
