Ingredients:
- 1 kg potatoes, peeled and cut into large chunks
- 1 onion, finely chopped
- 2 carrots, finely chopped
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1 tomato, peeled and finely chopped
- 2 cloves garlic, minced
- 1/2 bunch parsley, finely chopped
- 70g tomato paste
- Salt
- Black pepper
- Paprika
- Savory
- 1 tablespoon wheat starch
- 100 ml water
- Cooking oil

Instructions:
- Sauté the vegetables: Heat some oil in a pot. Add the onion, carrots, red bell pepper, green bell pepper, and garlic. Sauté for 2-3 minutes.
- Add tomato paste: Stir in the tomato paste and a few pinches of paprika.
- Simmer the potatoes: Add the potatoes to the pot and pour in water until it reaches about an inch above the potatoes. Cover the pot and cook for 30 minutes.
- Add tomatoes and herbs: Add the tomatoes and chopped parsley. Season with salt, black pepper, and savory. Stir.
- Thicken the stew: In a small bowl, dissolve the wheat starch in water. Add this mixture to the stew. Stir and remove from heat.
- Serve: Garnish with fresh parsley and serve.
