Ingredients:

  • 1 kg potatoes, peeled and cut into large chunks
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 tomato, peeled and finely chopped
  • 2 cloves garlic, minced
  • 1/2 bunch parsley, finely chopped
  • 70g tomato paste
  • Salt
  • Black pepper
  • Paprika
  • Savory
  • 1 tablespoon wheat starch
  • 100 ml water
  • Cooking oil

Instructions:

  1. Sauté the vegetables: Heat some oil in a pot. Add the onion, carrots, red bell pepper, green bell pepper, and garlic. Sauté for 2-3 minutes.
  2. Add tomato paste: Stir in the tomato paste and a few pinches of paprika.
  3. Simmer the potatoes: Add the potatoes to the pot and pour in water until it reaches about an inch above the potatoes. Cover the pot and cook for 30 minutes.
  4. Add tomatoes and herbs: Add the tomatoes and chopped parsley. Season with salt, black pepper, and savory. Stir.
  5. Thicken the stew: In a small bowl, dissolve the wheat starch in water. Add this mixture to the stew. Stir and remove from heat.
  6. Serve: Garnish with fresh parsley and serve.
