Ingredients:
- 900 g (2 lbs) pork tongue
- 60 g (2 oz) butter
- Seasoned salt
- Salt
- Red pepper
- Black peppercorns
- Allspice
- 3 bay leaves
- Oil
Instructions:
Boiling the tongue:
- Place the tongue in a pot and cover it with water.
- Add a few black peppercorns, allspice, and bay leaves.
- Turn on the stovetop and simmer over medium heat for about 2 hours.
- After 2 hours, check if the tongue is cooked through by piercing it with a skewer. If the skewer comes out easily, the tongue is ready.
- Remove the tongue from the pot and let it cool slightly.
Peeling the tongue:
- While the tongue is still warm, peel off the skin. The skin should come off easily.
Slicing the tongue:
- Slice the tongue into 1 cm (0.4 inch) thick pieces, slightly diagonally.
Sautéing the tongue:
- In a frying pan, heat a little oil and half of the butter.
- Add half of the sliced tongue and sauté lightly on both sides.
- Season with salt, red pepper, and seasoned salt.
- Coat the tongue pieces well in the seasoned butter.
- Turn off the heat.
- Repeat with the remaining tongue and butter.
Serving:
- Arrange the tongue on a plate.
- Sprinkle with more seasoned salt if desired.
