  • 900 g (2 lbs) pork tongue
  • 60 g (2 oz) butter
  • Seasoned salt
  • Salt
  • Red pepper
  • Black peppercorns
  • Allspice
  • 3 bay leaves
  • Oil

Instructions:

Boiling the tongue:

  1. Place the tongue in a pot and cover it with water.
  2. Add a few black peppercorns, allspice, and bay leaves.
  3. Turn on the stovetop and simmer over medium heat for about 2 hours.
  4. After 2 hours, check if the tongue is cooked through by piercing it with a skewer. If the skewer comes out easily, the tongue is ready.
  5. Remove the tongue from the pot and let it cool slightly.

Peeling the tongue:

  1. While the tongue is still warm, peel off the skin. The skin should come off easily.

Slicing the tongue:

  1. Slice the tongue into 1 cm (0.4 inch) thick pieces, slightly diagonally.

Sautéing the tongue:

  1. In a frying pan, heat a little oil and half of the butter.
  2. Add half of the sliced tongue and sauté lightly on both sides.
  3. Season with salt, red pepper, and seasoned salt.
  4. Coat the tongue pieces well in the seasoned butter.
  5. Turn off the heat.
  6. Repeat with the remaining tongue and butter.

Serving:

  1. Arrange the tongue on a plate.
  2. Sprinkle with more seasoned salt if desired.
