Instructions:
- Cut the pork neck into large pieces and place it in a pot with about 2 liters (8 cups) of water. Turn on the stove and wait for it to boil. Remove the excess foam that forms on the surface of the broth. Cook for 30 minutes, then remove the meat to cool and save the broth.
- Meanwhile, chop the onions, carrots, garlic, and red bell pepper finely. Cut the potatoes into small cubes. Chop the parsley stalks and leaves finely.
- In a preheated pot, add a little oil and add the chopped onions, carrots, garlic, and bell pepper. Add the chopped parsley stalks as well. Fry the vegetables for 1-2 minutes. Add the strained pork broth. Add some water if necessary. You should judge according to the quantities you use. Bring the soup to a boil.
- Meanwhile, cut the cooked pork into small cubes.
