Ingredients:

  • 400 g (14 oz) pork tenderloin (4 medallions of 100 g each)
  • 250 g (9 oz) mushrooms, thinly sliced
  • 1/2 onion, finely chopped
  • 3-4 cloves garlic, finely chopped
  • 50 ml (1.7 fl oz) white wine
  • 20 ml (0.7 fl oz) soy sauce
  • 40 g (1.4 oz) butter
  • 1/2 bunch parsley, finely chopped
  • Flour for dredging
  • Salt
  • Black pepper
  • Thyme
  • Oil

Instructions:

  1. Season the medallions with salt and black pepper.
  2. Dredge them in flour and shake off any excess.
  3. Heat oil in a pan and fry the medallions until golden brown on both sides.
  4. Remove the medallions from the pan and set aside.
  5. Add a little more oil to the same pan and sauté the onion and garlic for 1-2 minutes.
  6. Add the mushrooms and sauté until softened.
  7. Pour in the white wine and soy sauce, stir, and add 500 ml (17 fl oz) of water.
  8. Season with salt, black pepper, and thyme.
  9. Return the medallions to the pan and simmer until the sauce thickens, about 20 minutes.
  10. If desired, you can thicken the sauce with flour.
  11. Turn off the heat.
  12. Sprinkle with parsley and add the knobs of butter.
  13. Stir gently to melt the butter and make the sauce glossy.
  14. Serve the medallions drizzled with the sauce.
