Ingredients:

  • 650g pork shoulder, cut into large pieces
  • 4 onions, thinly sliced
  • 3 red bell peppers, coarsely chopped
  • 300g mushrooms, sliced
  • 3 cloves garlic, minced
  • 100ml white wine
  • 100g tomato puree
  • 1 bunch of parsley, finely chopped
  • Salt
  • Black pepper
  • Paprika
  • Marjoram
  • Oil
  • 300ml water

Instructions:

  1. Sear the pork: In a preheated pot or Dutch oven, heat some oil and add the pork pieces. Sear on all sides until golden brown, about 7-8 minutes.
  2. Sauté the vegetables: Add the onions, bell peppers, mushrooms, and garlic to the pot. Stir well to combine.
  3. Simmer: Cover the pot and let the vegetables simmer for about 15-20 minutes, stirring occasionally.
  4. Add tomato puree: Add the tomato puree and 3-4 teaspoons of paprika. Stir and cook for a few minutes.
  5. Add liquid and seasonings: Pour in the white wine and water. Season with salt, black pepper, marjoram, and chopped parsley. Stir well.
  6. Simmer: Cover the pot and simmer on low heat for about 30 minutes, or until the liquid has evaporated and the dish is coated in a flavorful sauce.
  7. Serve: Garnish with fresh parsley and serve hot.
