Ingredients:

  • 600g pork shoulder, cut into large pieces
  • 400g frozen peas
  • 2 onions, finely chopped
  • 2 carrots, finely chopped
  • 250g canned tomatoes
  • A few sprigs of mint, finely chopped
  • Half a bunch of parsley, finely chopped
  • Salt
  • Black pepper
  • Paprika
  • Oil
  • 1 liter water
  • 1 tablespoon flour
  • 50g butter

Instructions:

  1. Brown the pork: Heat oil in a pot and add the pork. Brown on all sides for 7-8 minutes, stirring occasionally.
  2. Add vegetables: Add the onions and carrots to the pot and cook for 2-3 minutes more, or until softened.
  3. Add spices: Stir in 2-3 teaspoons of paprika and cook for a few seconds until fragrant.
  4. Simmer: Add the tomatoes, peas, and water. Stir to combine. Cover the pot and simmer over medium heat for 30 minutes.
  5. Season: Season with salt, black pepper, mint, and parsley. Stir and simmer for an additional 20 minutes.
  6. Thicken the stew: In a separate saucepan, melt the butter and whisk in the flour. Cook for 30-40 seconds, stirring constantly. Gradually add some of the stew liquid to the flour mixture, whisking until smooth. Return the mixture to the pot and stir to combine.
  7. Serve: Remove from heat and serve immediately.
