  • 50 g (1/4 cup) flour
  • 2 egg yolks
  • Juice of 1/2 lemon
  • 1/2 bunch parsley, finely chopped

Instructions:

  1. Place the chicken thighs in a pot filled with cold water. Bring to a boil over medium-high heat.
  2. Skim off any foam that forms on the surface.
  3. Add the onion, carrot, and parsley stalks. Season with salt and black peppercorns.
  4. Reduce the heat to medium and simmer for 40 minutes.
  5. Remove the chicken thighs and set aside to cool.
  6. Strain the broth.
  7. Once the chicken thighs are cool enough to handle, remove the bones and shred the meat.
  8. In a small bowl, whisk together the egg yolks and lemon juice.
  9. In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1 minute.
  10. Gradually whisk in the fresh milk, ensuring no lumps form.
  11. Cook until the sauce thickens.
  12. Add a few ladles of the broth to adjust the consistency of the sauce.
  13. Gradually add some of the sauce to the egg yolk mixture to temper it.
  14. Return the tempered egg yolk mixture to the saucepan. Add salt, shredded chicken, and finely chopped parsley.
  15. Stir gently and simmer for a few minutes.
  16. Serve with your favorite side dish and enjoy!

  • For a richer flavor, use bone-in chicken thighs.
  • You can also add other vegetables to the fricassee, such as celery, mushrooms, or peas.
