Instructions:
- Place the chicken thighs in a pot filled with cold water. Bring to a boil over medium-high heat.
- Skim off any foam that forms on the surface.
- Add the onion, carrot, and parsley stalks. Season with salt and black peppercorns.
- Reduce the heat to medium and simmer for 40 minutes.
- Remove the chicken thighs and set aside to cool.
- Strain the broth.
- Once the chicken thighs are cool enough to handle, remove the bones and shred the meat.
