  • 2 onions, finely chopped
  • 2 carrots, finely chopped

  • 1/2 bunch parsley, finely chopped
  • 1/2 bunch celery, finely chopped
  • 3.4 fl oz (100 ml) white wine
  • Salt
  • Black pepper
  • Olive oil
  • 4.2 cups (1 liter) water

Instructions:

  1. Heat oil in a pot over medium heat.
  2. Add the pork and sear for 5-6 minutes until browned on all sides.
  3. Add the onions, carrots, and bell peppers and cook for 2-3 minutes until softened.
  4. Pour in the white wine and about 1 cup (300 ml) of water.
  5. Stir, cover, and simmer on low heat for 20-25 minutes, or until the pork is tender.
  6. Add the rice, stir, and season with salt and black pepper.
  7. Incorporate the parsley and celery, and mix.
  8. Transfer the dish to a baking pan.
  9. Add 4.2 cups (1 liter) of water and stir to distribute the rice evenly.
  10. Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, for about 50 minutes.
  11. Garnish with additional parsley and serve.
