Recipe for: Onion Stew with Pork
Ingredients:
- 8 medium onions, thinly sliced
- 1.3 lbs (600 g) pork neck, cubed
- 1 large tomato, peeled and finely chopped
- 1/2 bunch parsley, finely chopped
- 3 cloves garlic, minced
- 3.4 fl oz (100 ml) white wine
- 2 tsp sugar
- Salt to taste
- Red pepper to taste
- Black peppercorns
- Bay leaf
- Olive oil

Instructions:
- Heat olive oil in a pot and brown the pork cubes until golden.
- Add white wine and about 300 ml (1.3 cups) water.
- Simmer for about 20-25 minutes, or until the liquid has almost evaporated.
- Add the sliced onions, lightly salted and squashed, and sauté under a lid for about 5-6 minutes, stirring occasionally.
- Add the tomato, parsley, garlic, sugar, red pepper, black pepper, salt (taste it first as you already salted the onions), bay leaf, and about 300 ml (1.3 cups) more water.
- Cover the pot and simmer over medium heat for about 30 minutes, or until all the liquid has evaporated and the stew is oily.
- Serve hot, garnished with fresh parsley.
