Ingredients:

  • 8 medium onions, thinly sliced
  • 1.3 lbs (600 g) pork neck, cubed
  • 1 large tomato, peeled and finely chopped
  • 1/2 bunch parsley, finely chopped
  • 3 cloves garlic, minced
  • 3.4 fl oz (100 ml) white wine
  • 2 tsp sugar
  • Salt to taste
  • Red pepper to taste
  • Black peppercorns
  • Bay leaf
  • Olive oil

Instructions:

  1. Heat olive oil in a pot and brown the pork cubes until golden.
  2. Add white wine and about 300 ml (1.3 cups) water.
  3. Simmer for about 20-25 minutes, or until the liquid has almost evaporated.
  4. Add the sliced onions, lightly salted and squashed, and sauté under a lid for about 5-6 minutes, stirring occasionally.
  5. Add the tomato, parsley, garlic, sugar, red pepper, black pepper, salt (taste it first as you already salted the onions), bay leaf, and about 300 ml (1.3 cups) more water.
  6. Cover the pot and simmer over medium heat for about 30 minutes, or until all the liquid has evaporated and the stew is oily.
  7. Serve hot, garnished with fresh parsley.
