Ingredients:

For the meatballs:

  • 1 pound (500 g) ground beef
  • 1/4 cup (50 g) uncooked rice
  • 1 small onion, finely chopped
  • 1/4 cup (6 g) finely chopped parsley
  • 1 egg
  • 1/4 cup (30 g) breadcrumbs
  • Salt to taste
  • Black pepper to taste
  • Savory spice (such as savory or thyme) to taste
  • Flour for dredging

For the sauce:

  • 15 ounces (400 g) plain yogurt
  • 3 egg yolks
  • Stalks from 1/4 cup (6 g) parsley and 1/4 cup (6 g) celery
  • 1 carrot, coarsely chopped
  • 1 onion, coarsely chopped
  • 2 tablespoons all-purpose flour
  • 1/4 cup (50 g) butter

For the roux:

  • 2 carrots, coarsely grated
  • Olive oil

Instructions:

Making the meatballs:

  1. In a large pot, bring 2 liters (8 cups) of water to a boil. Add the coarsely chopped onion, carrot, parsley stalks, celery, and 1 teaspoon of salt.
  2. In a bowl, combine the ground beef, rice, chopped onion, egg, parsley, breadcrumbs, salt, black pepper, and savory spice. Mix well.
  3. Wet your hands and form the mixture into meatballs. Dredge the meatballs in flour.
  4. Once the broth is boiling, gently drop the meatballs into the pot and simmer for about 25-30 minutes.
  5. Remove the meatballs from the broth and set aside. Strain the broth.

Making the sauce:

  1. In a separate saucepan, whisk together the yogurt, egg yolks, and flour until smooth.
  2. Place the saucepan over medium heat and continue whisking.
  3. Gradually add half of the strained broth, whisking constantly. Do not add all of the broth; you only need about half!
  4. Season with salt to taste and stir. Bring to a simmer and cook until the sauce thickens slightly.
  5. Remove from heat and stir in the butter.
  6. Return the meatballs to the sauce.

Making the roux:

  1. In a small saucepan, heat the olive oil over low heat. Add the grated carrots and sauté for 5-6 minutes, until the oil turns orange.
  2. Drain the excess oil from the carrots using a strainer.

Serving:

  1. Serve a portion of meatballs with white sauce.
  2. If desired, drizzle with a little of the roux.
