Recipe for: Marinated Peppers with Garlic in Jars for Winter
Ingredients:
- 3 kg red bell peppers, washed and seeded
- 1 bunch parsley, finely chopped
- 10 cloves garlic, minced
- 400 ml wine vinegar
- 100 ml oil
- 200 g sugar
- 100 g salt
- 4 bay leaves
- 2 teaspoons black peppercorns
- 10 allspice berries

Instructions:
- Cut the peppers: Cut the peppers into large pieces.
- Prepare the marinade: In a pot, combine the vinegar, oil, salt, sugar, bay leaves, black peppercorns, and allspice berries. Bring to a boil, stirring until the salt and sugar dissolve.
- Simmer the peppers: Add the peppers to the boiling marinade and stir. Let simmer for 10 minutes, stirring occasionally.
- Add garlic and parsley: Remove the peppers from the marinade and add the minced garlic and parsley. Stir well to combine.
- Jar the peppers: Pour the remaining marinade into a pitcher. Pack the peppers into clean, dry jars (720 ml). Pour the marinade over the peppers, filling each jar. Seal tightly with lids.
- Process the jars: Place the jars in a pot with a cloth on the bottom. Fill the pot with water and bring to a boil. Process the jars for 10 minutes.
- Cool and store: Remove the jars from the pot and turn them upside down. Let them cool completely, then store in a cool, dark place for winter.
