Ingredients:

  • 3 kg red bell peppers, washed and seeded
  • 1 bunch parsley, finely chopped
  • 10 cloves garlic, minced
  • 400 ml wine vinegar
  • 100 ml oil
  • 200 g sugar
  • 100 g salt
  • 4 bay leaves
  • 2 teaspoons black peppercorns
  • 10 allspice berries

Instructions:

  1. Cut the peppers: Cut the peppers into large pieces.
  2. Prepare the marinade: In a pot, combine the vinegar, oil, salt, sugar, bay leaves, black peppercorns, and allspice berries. Bring to a boil, stirring until the salt and sugar dissolve.
  3. Simmer the peppers: Add the peppers to the boiling marinade and stir. Let simmer for 10 minutes, stirring occasionally.
  4. Add garlic and parsley: Remove the peppers from the marinade and add the minced garlic and parsley. Stir well to combine.
  5. Jar the peppers: Pour the remaining marinade into a pitcher. Pack the peppers into clean, dry jars (720 ml). Pour the marinade over the peppers, filling each jar. Seal tightly with lids.
  6. Process the jars: Place the jars in a pot with a cloth on the bottom. Fill the pot with water and bring to a boil. Process the jars for 10 minutes.
  7. Cool and store: Remove the jars from the pot and turn them upside down. Let them cool completely, then store in a cool, dark place for winter.
