Recipe for: Marinated Hot Peppers in Jars for Winter
Ingredients:
- 1.2 kg mixed hot peppers (fish peppers, yellow bell peppers, corno di toro peppers)
- 4 carrots, grated
- 1 bunch dill, finely chopped
- 1 bunch parsley, finely chopped
- 10 cloves garlic, minced
- 300 ml wine vinegar
- 300 ml oil
- 30 g salt
- 50 g sugar

Instructions:
- Prepare the marinade: In a pot, combine the oil, vinegar, salt, sugar, minced garlic, dill, and parsley. Stir until the salt and sugar dissolve.
- Add carrots: Add the grated carrots and stir again.
- Roast the peppers: Heat a skillet and add the peppers. Roast them, stirring occasionally, until they are charred on all sides. While still hot, add them to the marinade.
- Marinate: Stir the peppers well in the marinade and cover the pot. Let them marinate for at least 1 hour.
- Jar the peppers: After 1 hour, fill pre-washed and dried jars (720 ml) with the marinated peppers. Divide the remaining marinade among the jars.
- Seal and process: Seal the jars with lids and tighten securely. Place the jars in a pot with a cloth on the bottom. Fill the pot with water and bring to a boil. Boil for 20 minutes.
- Cool and store: Remove the jars from the pot and turn them upside down. Let them cool completely. Store in a cool, dark place for winter.
