Instructions:

  1. Prepare the marinade: In a pot, combine the oil, vinegar, salt, sugar, minced garlic, dill, and parsley. Stir until the salt and sugar dissolve.
  2. Add carrots: Add the grated carrots and stir again.
  3. Roast the peppers: Heat a skillet and add the peppers. Roast them, stirring occasionally, until they are charred on all sides. While still hot, add them to the marinade.
  4. Marinate: Stir the peppers well in the marinade and cover the pot. Let them marinate for at least 1 hour.
  5. Jar the peppers: After 1 hour, fill pre-washed and dried jars (720 ml) with the marinated peppers. Divide the remaining marinade among the jars.
  6. Seal and process: Seal the jars with lids and tighten securely. Place the jars in a pot with a cloth on the bottom. Fill the pot with water and bring to a boil. Boil for 20 minutes.
  7. Cool and store: Remove the jars from the pot and turn them upside down. Let them cool completely. Store in a cool, dark place for winter.

Enjoy!
