Recipe for: Marinated Cucumbers in Jars
Ingredients:
- 1.5 kg gherkin cucumbers
- 1 onion, thinly sliced
- A few sprigs of dill
- 8g mustard seeds
- 1 tablespoon salt per jar
- 1 tablespoon sugar per jar
- Black peppercorns
- Allspice berries
- Vinegar (white wine or apple cider)

Instructions:
- Prepare the jars: Wash and dry 720 ml jars with hot water.
- Layer the jars: Pour a layer of vinegar into the bottom of each jar. Add sliced onion.
- Season: Add 1 tablespoon of salt and 1 tablespoon of sugar to each jar. Add 1 teaspoon of black peppercorns and 3 allspice berries to each jar.
- Pack the cucumbers: Pack the cucumbers tightly into the jars. Add a sprig of dill and 1/2 teaspoon of mustard seeds to each jar.
- Fill with water: Pour water into each jar up to the neck.
- Seal the jars: Seal the jars tightly with lids.
- Process: Place the jars in a pot with a cloth on the bottom. Fill the pot with water, covering the jars by about an inch. Bring to a boil and process for 10 minutes.
- Cool and store: Remove the jars from the pot and turn them upside down. Let them cool completely, then store in a cool, dark place.
