Marinated Cucumbers in Jars

Ingredients:

  • 1.5 kg gherkin cucumbers
  • 1 onion, thinly sliced
  • A few sprigs of dill
  • 8g mustard seeds
  • 1 tablespoon salt per jar
  • 1 tablespoon sugar per jar
  • Black peppercorns
  • Allspice berries
  • Vinegar (white wine or apple cider)

Instructions:

  1. Prepare the jars: Wash and dry 720 ml jars with hot water.
  2. Layer the jars: Pour a layer of vinegar into the bottom of each jar. Add sliced onion.
  3. Season: Add 1 tablespoon of salt and 1 tablespoon of sugar to each jar. Add 1 teaspoon of black peppercorns and 3 allspice berries to each jar.
  4. Pack the cucumbers: Pack the cucumbers tightly into the jars. Add a sprig of dill and 1/2 teaspoon of mustard seeds to each jar.
  5. Fill with water: Pour water into each jar up to the neck.
  6. Seal the jars: Seal the jars tightly with lids.
  7. Process: Place the jars in a pot with a cloth on the bottom. Fill the pot with water, covering the jars by about an inch. Bring to a boil and process for 10 minutes.
  8. Cool and store: Remove the jars from the pot and turn them upside down. Let them cool completely, then store in a cool, dark place.
