Ingredients:

  • 500 g (17.6 oz) chickpeas (from a can or jar)
  • 1 onion (finely chopped)

  • 100 g (3.5 oz) canned crushed tomatoes

Instructions:

  1. In a preheated deep skillet or small saucepan, add a little oil. Add the chopped onion, carrots, red bell pepper, green bell pepper, and garlic. Stir and cover with a lid. Sauté over medium heat, stirring occasionally, until the vegetables soften.
  2. Add the white wine, stir and wait for it to evaporate. Add the crushed tomatoes and about 300 milliliters (10.1 fl oz) of water. Season with salt, paprika, a little curry, and cumin. Add the bay leaf and allspice berries. Add the chickpeas (washed and drained) and stir to mix everything well. Cover and let the stew simmer over low heat for about 40 minutes. During cooking, add a little water if necessary.
  3. 40 minutes later. It’s time to thicken the stew slightly. To do this, pour two ladles of the stew and some of the broth into a narrow deep bowl. Blend until smooth. Pour the slurry into the stew and stir to mix everything well. This way we thicken without using flour or starch. Let the stew simmer for another 4-5 minutes over low heat, then turn off the heat.
