Ingredients:

  • 3 kg tomatoes, washed, cleaned, and coarsely chopped
  • 4 onions, coarsely chopped
  • 5-6 carrots, coarsely chopped
  • 1/2 head of celery, coarsely chopped
  • 10 cloves garlic
  • 1 bunch basil, finely chopped
  • 3 tablespoons salt
  • 3 tablespoons sugar
  • 100 ml olive oil

Instructions:

  1. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add the onions, carrots, celery, and garlic. Cook for 7-8 minutes, or until the vegetables start to caramelize.
  2. Simmer the tomatoes: Add the chopped tomatoes to the pot and stir to combine. Cover and simmer over medium heat for 30 minutes.
  3. Season and cook: Add the salt, sugar, and basil to the pot. Stir to combine. Cover and cook for another 30 minutes.
  4. Blend: Remove from heat and use an immersion blender or a regular blender to puree the sauce until smooth.
  5. Can the sauce: Pour the sauce into sterilized jars, leaving about 1/2 inch of headspace. Seal the jars tightly with lids.
  6. Process the jars: Place the jars in a large pot with a rack on the bottom. Pour in enough water to cover the jars by about an inch. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
  7. Cool and store: Remove the jars from the pot and let them cool undisturbed. Once cooled, store in a cool, dark place.
