Ingredients:
For the Dough:
- 3.5 cups (380 g) all-purpose flour, sifted
- 1/2 cup (100 ml) lukewarm water
- 1 egg at room temperature
- 1 tablespoon white vinegar
- 1/4 cup (50 ml) olive oil
- 1/4 cup (50 g) butter, softened
- 1 teaspoon salt
- 1 teaspoon sugar
For the Filling:
- 11 oz (300 g) crumbled feta cheese
- 3 eggs
- 3 oz (80 g) plain yogurt
- 1/4 cup (50 g) butter
For Brushing:
- 1 tablespoon melted butter

Instructions:
Making the Dough:
- In a large bowl, whisk together the water, egg, vinegar, olive oil, salt, and sugar until well combined.
- Add half of the flour and butter, and mix until a shaggy dough forms.
- Add the remaining flour and knead until a smooth, elastic dough is formed.
- Shape the dough into a ball, divide it into 6 equal pieces, and form 6 balls.
- Place the dough balls in a floured bowl, dust them with flour, and cover with a towel. Let them rest for 10 minutes.
- Grease a 13-inch (34 cm) baking pan with butter.
Preparing the Filling:
- In a bowl, combine the feta cheese, eggs, yogurt, and butter. Mix well until smooth.
Rolling the Pastries:
- Take one dough ball and keep the rest covered to prevent them from drying out.
- Lightly flour a work surface and roll out the dough ball into the thinnest possible pastry.
- Drape the pastry over a rolling pin, carefully stretch it out to the sides, rotate it, and repeat the stretching motion until the pastry is very thin and delicate.
- Spread a portion of the filling evenly over the pastry and roll it up into a log.
- Coil the log into a spiral shape and place it in the center of the prepared baking pan.
- Repeat the rolling, filling, and coiling process with the remaining dough balls.
- Brush the top of the banitsa with the remaining melted butter.
Baking:
- Preheat the oven to 350°F (180°C) without the fan, set to the bottom rack.
- Bake the banitsa for about 50 minutes, or until golden brown and crispy.
