Ingredients:

  • 700 ml olive oil
  • 3 tablespoons sugar
  • 100 grams honey (or about 5-6 tablespoons)
  • 4 tablespoons salt

Instructions:

  1. Prepare the eggplant: Pierce the eggplant in several places with a knife or fork to prevent it from exploding during roasting. Roast the eggplant in a grill or oven.
  2. Roast the peppers: While the eggplant is roasting, boil the carrots until tender. Roast the peppers in a grill or oven.
  3. Peel and process vegetables: Peel the roasted eggplant and peppers. Clean and cut the tomatoes into large pieces suitable for a meat grinder.
  4. Grind vegetables: Grind the tomatoes, peppers, eggplant, and carrots using a meat grinder.
  5. Cook the tomatoes: Pour the olive oil into a large pot and heat. Add the ground tomatoes and cook for 30 minutes, or until the volume has reduced by a third.
  6. Combine and cook: Add the mixture of ground peppers, eggplant, and carrots to the pot. Continue cooking for another 30-40 minutes over low heat.
  7. Add seasonings and cook: Add the sugar, salt, honey, and a little more olive oil. Stir well. Continue cooking the lyutenitsa for about an hour and a half over low heat, stirring occasionally and adding more olive oil as needed.
  8. Check consistency: The lyutenitsa is ready when a trail forms when you run a spoon through it. Taste and adjust the seasonings if necessary.
  9. Can the lyutenitsa: Fill sterilized jars with the hot lyutenitsa. Seal the jars tightly with lids.
  10. Process jars: Place the jars in a pot with a cloth on the bottom, add water (one inch above the lids), and boil for 20 minutes.
  11. Cool and store: Remove the jars and turn them upside down. Let them cool completely and store in a cool, dark place for winter.
