Instructions:

  1. Make the chicken marinade: In a large bowl, combine yogurt, garlic, a little oil, 1 teaspoon each of salt, curry powder, cumin, and paprika. Mix well. Add chicken pieces and stir to coat evenly. Cover the bowl with plastic wrap and refrigerate for about 2 hours.
  2. Prepare the garlic sauce: In another bowl, combine yogurt, mayonnaise, tahini, garlic, and a pinch of salt. Mix well.
  3. Fry the potatoes: Heat oil in a deep fryer or large pot. Fry the potatoes until golden brown. Remove and drain on paper towels. Lightly salt.
  4. Cook the chicken: Grill the chicken pieces in a grill pan or skillet with a little oil until golden brown on both sides. Then, chop them into small pieces.
  5. Assemble the shawarmas: Spread garlic sauce on each tortilla. Add fried potatoes, chopped chicken, cucumber, tomato, and onion. Roll the tortilla tightly. To prevent it from falling apart, wrap it in parchment paper.
