Ingredients:

  • 4 kg (9 lbs) strawberries, washed
  • 1.6 kg (3.5 lbs) sugar (400 g sugar per 1 kg strawberries)
  • 5 g (0.2 oz) citric acid (or ½ packet)
  • 3 packets vanilla

Instructions:

  1. Wash the strawberries and remove the green tops. Cut them into quarters.
  2. In a bowl, combine the sugar and vanilla. Mix well.
  3. Arrange the strawberries and sugar in a pot, alternating between a layer of strawberries and a layer of sugar. End with sugar.
  4. Cover the pot with a lid and leave it in the refrigerator overnight to let the strawberries release their juice.
  5. The next day, remove the pot from the refrigerator and let it sit at room temperature for 20 minutes to acclimate the strawberries.
  6. Turn on the stovetop to medium heat and bring the jam to a boil. Skim off any foam that forms.
  7. Simmer the jam over medium heat, stirring occasionally, until it thickens, for about 90 minutes.
  8. Finally, add the citric acid and stir.
  9. Boil for another 10 minutes.
  10. Turn off the heat and let the jam cool slightly.
  11. Fill previously washed and sterilized jars with the jam.
  12. Close the lids tightly.
  13. Place a towel on the bottom of a pot and arrange the jars in it.
  14. Pour water into the pot so that it covers the lids of the jars.
  15. Bring the water to a boil, then reduce heat and simmer for 5 minutes.
  16. Remove the jars from the pot and turn them upside down.
  17. Let the jam cool completely.
  18. Store the jam in a cool, dark place.
