Ingredients:
- 4 kg (9 lbs) strawberries, washed
- 1.6 kg (3.5 lbs) sugar (400 g sugar per 1 kg strawberries)
- 5 g (0.2 oz) citric acid (or ½ packet)
- 3 packets vanilla

Instructions:
- Wash the strawberries and remove the green tops. Cut them into quarters.
- In a bowl, combine the sugar and vanilla. Mix well.
- Arrange the strawberries and sugar in a pot, alternating between a layer of strawberries and a layer of sugar. End with sugar.
- Cover the pot with a lid and leave it in the refrigerator overnight to let the strawberries release their juice.
- The next day, remove the pot from the refrigerator and let it sit at room temperature for 20 minutes to acclimate the strawberries.
- Turn on the stovetop to medium heat and bring the jam to a boil. Skim off any foam that forms.
- Simmer the jam over medium heat, stirring occasionally, until it thickens, for about 90 minutes.
- Finally, add the citric acid and stir.
- Boil for another 10 minutes.
- Turn off the heat and let the jam cool slightly.
- Fill previously washed and sterilized jars with the jam.
- Close the lids tightly.
- Place a towel on the bottom of a pot and arrange the jars in it.
- Pour water into the pot so that it covers the lids of the jars.
- Bring the water to a boil, then reduce heat and simmer for 5 minutes.
- Remove the jars from the pot and turn them upside down.
- Let the jam cool completely.
- Store the jam in a cool, dark place.
