Instructions:
- In a preheated pot, add some oil and the chicken portions. Sear until golden brown. After searing the meat, add 1 liter (34 fl oz) of water to the pot and cook for 30 minutes.
- After 30 minutes, remove the cooked chicken and strain the broth.
- Heat the pot on the stove again and add some oil. Add the chopped onion, carrots, and garlic, and fry for 1-2 minutes. Add the mushrooms and continue cooking for a few more minutes until softened. Then add the white wine and wait for it to evaporate. Add the canned crushed tomatoes, return the chicken portions to the pot, and add the chicken broth. Season with salt, black pepper, and marjoram. Stir and leave the dish on low heat.
- Meanwhile, heat a saucepan on the other stovetop and add the butter. Wait for it to melt and add the flour. Stir to fry for 1-2 minutes. Add some of the stew sauce to it and stir with a wire whisk. Return everything to the pot and let the stew simmer on low heat for 30 minutes.
- Sprinkle the finished dish with finely chopped fresh parsley.
Enjoy!
Here are some additional tips:
- You can use any type of chicken you like.
- If you don’t have white wine, you can use chicken broth or water.
- You can add other vegetables to the stew, such as potatoes, celery, or green beans.
- To make the grandma’s chicken stew with mushrooms even more delicious, brush the chicken pieces with melted butter before searing.
- Serve the grandma’s chicken stew with mushrooms with your favorite sides, such as rice or mashed potatoes.
Please note:
- The original recipe calls for simmering the stew for 30 minutes. You can simmer it for longer if you like, but be careful not to overcook the chicken.
- The recipe also calls for serving the stew with parsley. This is optional, but it adds a nice touch of freshness.
