Recipe for: Fruit and White Chocolate Bars

Preheat the oven to 170°C (3 gas).

Ingredients:

  • 250 g white chocolate
  • 60 g butter
  • 125 g apricot jam
  • 125 g honey
  • 80 g coarsely chopped almonds
  • 100 g coarsely chopped macadamia nuts
  • 150 g desiccated coconut
  • 100 g dried apricots, coarsely chopped
  • 100 g white raisins
  • 50 g flour
  • 1 tsp ground ginger

Instructions:

  1. Grease and flour a deep 20 x 30 cm baking tray. Line with baking paper.
  2. Melt the chocolate and butter in a bain-marie.
  3. Place the honey and apricot jam in a small saucepan and warm over a low heat until melted.
  4. In a large bowl, combine the almonds, macadamia nuts, coconut, dried apricots, raisins, flour, and ginger.
  5. Add the chocolate mixture and the honey mixture and stir until well combined.
  6. Pour the mixture into the prepared tray and smooth over with the back of a spoon.
  7. Bake for 40-45 minutes, or until golden brown.
  8. Remove from the oven and leave to cool in the tray for at least 1 hour.
  9. Cut into squares.

Makes about 20 squares.

  • You can substitute other dried fruits for the apricots, such as blueberries, cranberries, or apples.
