Preheat the oven to 170°C (3 gas).
Ingredients:
- 250 g white chocolate
- 60 g butter
- 125 g apricot jam
- 125 g honey
- 80 g coarsely chopped almonds
- 100 g coarsely chopped macadamia nuts
- 150 g desiccated coconut
- 100 g dried apricots, coarsely chopped
- 100 g white raisins
- 50 g flour
- 1 tsp ground ginger

Instructions:
- Grease and flour a deep 20 x 30 cm baking tray. Line with baking paper.
- Melt the chocolate and butter in a bain-marie.
- Place the honey and apricot jam in a small saucepan and warm over a low heat until melted.
- In a large bowl, combine the almonds, macadamia nuts, coconut, dried apricots, raisins, flour, and ginger.
- Add the chocolate mixture and the honey mixture and stir until well combined.
- Pour the mixture into the prepared tray and smooth over with the back of a spoon.
- Bake for 40-45 minutes, or until golden brown.
- Remove from the oven and leave to cool in the tray for at least 1 hour.
- Cut into squares.
Makes about 20 squares.
