Instructions:
- In a large bowl, combine the warm milk, sugar, and yeast. Stir until the sugar is dissolved and let sit for 10 minutes to activate the yeast.
- In a separate bowl, whisk together the flour and salt. Make a well in the center and add the activated yeast mixture, egg, egg white, olive oil, and softened butter. Start kneading until you have a smooth, soft dough. Avoid adding extra flour; just lightly dust the work surface. The dough should be soft and elastic.
- Shape the dough into a ball, grease a large bowl with oil, and place the dough inside. Cover the bowl with a lid and let the dough rise in a warm place for 1 hour.
- After an hour, transfer the dough to a lightly floured surface and knead it gently. Divide it into 8 equal pieces and shape them into balls. Arrange the balls on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for another 30 minutes.
- Preheat the oven to 350°F (180°C) without the fan convection.
- In a small bowl, whisk together the egg yolk and whole milk. Brush the pita breads with the egg yolk mixture and sprinkle with sesame seeds.
- Bake the pita breads for 25-30 minutes on the bottom rack of the oven.
- Once the pita breads are golden brown and baked through, remove them from the oven and let them cool slightly.
