Ingredients:

For the Dough:
  • 6 ¼ cups (700 g) all-purpose flour, sifted
  • 1 ½ cups (350 ml) warm whole milk
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 packet (7 g) active dry yeast
  • 1 egg + 1 egg white
  • ¼ cup (40 ml) olive oil
  • ¼ cup (60 g) unsalted butter, softened
For Brushing:
  • 1 egg yolk
  • 2 tablespoons whole milk
For Sprinkling:
  • Sesame seeds

Instructions:
  1. In a large bowl, combine the warm milk, sugar, and yeast. Stir until the sugar is dissolved and let sit for 10 minutes to activate the yeast.
  2. In a separate bowl, whisk together the flour and salt. Make a well in the center and add the activated yeast mixture, egg, egg white, olive oil, and softened butter. Start kneading until you have a smooth, soft dough. Avoid adding extra flour; just lightly dust the work surface. The dough should be soft and elastic.
  3. Shape the dough into a ball, grease a large bowl with oil, and place the dough inside. Cover the bowl with a lid and let the dough rise in a warm place for 1 hour.
  4. After an hour, transfer the dough to a lightly floured surface and knead it gently. Divide it into 8 equal pieces and shape them into balls. Arrange the balls on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for another 30 minutes.
  5. Preheat the oven to 350°F (180°C) without the fan convection.
  6. In a small bowl, whisk together the egg yolk and whole milk. Brush the pita breads with the egg yolk mixture and sprinkle with sesame seeds.
  7. Bake the pita breads for 25-30 minutes on the bottom rack of the oven.
  8. Once the pita breads are golden brown and baked through, remove them from the oven and let them cool slightly.
  9. Enjoy your fluffy and delicious pita breads!

Tips:

  • For softer pita breads, brush them with butter after they come out of the oven.
  • You can also use a pizza stone to bake the pita breads for a crispier crust.
