Ingredients:
- 2 large red apples
- 1/2 cup (100 g) granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla sugar
- 2 eggs
- 3/4 cup (170 g) melted butter
- 1 3/4 cups (220 g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 cup (180 ml) whole milk
- Juice of 1 lemon
- 1/4 cup (30 g) raisins
For the topping:
- 1/4 cup (60 g) granulated sugar
- 1/2 cup (70 g) walnuts

Instructions:
Make the walnut topping:
- In a blender, grind the walnuts and 1/4 cup (60 g) sugar until smooth. Set aside.
Prepare the apples:
- Core and thinly slice one apple. Toss with half of the lemon juice.
- Peel and thinly slice the second apple. Toss with the remaining lemon juice.
Make the batter:
- In a large bowl, whisk together the eggs, sugar, salt, vanilla sugar, and melted butter.
- Gradually whisk in the milk.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, whisking until just combined.
- Stir in the raisins (reserve a few) and the first sliced apple.
- Pour the batter into a greased and floured 9-inch (24 cm) springform pan.
- Arrange the second sliced apple on top of the batter.
Top the cake:
- Sprinkle with the walnut topping and the remaining raisins.
Bake:
- Preheat the oven to 350°F (175°C) without the fan and bake on the bottom rack for about 60 minutes.
Cool:
- Let the cake cool slightly in the pan, then invert it onto a wire rack to cool completely.
Serve:
- Dust with powdered sugar, if desired.
Tips:
- For an even richer flavor, store the cake in the refrigerator for a few hours before serving.
- Serve the cake chilled.
- When removing the parchment paper from the cake, be gentle as it is delicate.
