Couscous with Chicken and Vegetables
Eggplant with Mayonnaise Salad
Instructions:
- Brown the pork: Heat some olive oil in a large pot over medium-high heat. Add the pork and cook, covered, for about 20 minutes, stirring occasionally. The goal is to render the fat and brown the meat.
- Sauté the aromatics: Remove the browned pork from the pot. In the same pot, add the onion, garlic, and celery stalks. Cook for 1-2 minutes, or until fragrant.
- Add spices and wine: Stir in the cumin and paprika. Cook for 10-15 seconds, or until fragrant. Then, add the red wine and cook for 1-2 minutes to let the alcohol evaporate.
- Combine ingredients: Return the browned pork to the pot. Add the potatoes, crushed tomatoes, and carrots. Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes.
- Finish: Add the red bell peppers, salt, black pepper, and chopped parsley and celery. Stir and simmer for an additional 30 minutes, or until the vegetables are tender and the flavors have melded.
Enjoy!
