Ingredients:
- Phyllo pastry sheets – 1 pack (400 g)
- Spinach – 300 g (parboiled, chopped finely)
- Fresh spring onions – 1 bunch (chopped finely)
- Dill – 1 bunch (chopped finely)
- Feta cheese – 250 g (crumbled)
- Yogurt – 400 g
- Eggs – 4
- Butter – 50 g
- Salt
- Oil

Instructions:
Filling:
- Heat the oil in a pan.
- Add the finely chopped spring onions and sauté for 1-2 minutes, until softened.
- Add the spinach and salt to taste.
- Cook for 1-2 minutes, until softened and the liquid has evaporated.
- Add the dill and stir.
- Remove from heat and let cool.
Shaping:
- Grease a baking pan with oil.
- Take 2 phyllo sheets and spread them out.
- Sprinkle with cheese and spread some of the filling on top.
- Roll up without pressing.
- Place the roll in the center of the pan, coiling it into a snail.
- Roll up the remaining phyllo sheets in the same way, wrapping each subsequent roll around the first.
- Continue until the pan is full. My pan is 34 cm in diameter and fits exactly one pack of phyllo sheets.
Topping:
- Whisk the eggs with the yogurt.
- Pour the egg mixture over the pie.
- Distribute chunks of butter on top.
Baking:
- Preheat the oven to 180°C (350°F) without a fan.
- Bake the pie in the lower part of the oven for 40-50 minutes.
Serving:
- Let the pie cool slightly and cut into pieces.
- Serve it warm, with a glass of refreshing ayran (yogurt drink).

Here are some additional tips:
- You can use frozen spinach instead of fresh spinach. If so, thaw it completely and squeeze out any excess water before using it.
- You can add other vegetables to the filling, such as chopped onions, mushrooms, or bell peppers.
- For a richer flavor, use full-fat yogurt instead of low-fat yogurt.
- If you don’t have ayran, you can serve the pie with a glass of milk, tea, or coffee.

- The original recipe calls for baking the pie in the lower part of the oven. You can also bake it in the middle of the oven if you prefer.
