Recipe for: Easy and Flaky Egg and Cheese Pastry (Tutmanik)
Ingredients:
For the Dough:
- 650 g (23 oz) flour (sifted beforehand) + 50 g (1.8 oz) additional
- 300 ml (10 fl oz) warm fresh milk
- 100 ml (3.5 fl oz) warm water
- 1 egg + 1 egg white
- 50 ml (1.7 fl oz) oil
- 1 tbsp sugar
- 7 g (0.25 oz) dry yeast
- 1 tsp salt
For the Filling:
- 3 eggs
- 350 g (12.3 oz) crumbled feta cheese
- 70 g (2.5 oz) melted butter
For Brushing:
- 1 egg yolk
- 1 tbsp fresh milk

Instructions:
Preparing the Dough:
- In a large bowl, combine the water, sugar, and yeast. Stir until the sugar dissolves and let sit for 10 minutes to activate the yeast.
- After 10 minutes, add the egg, egg white, oil, and milk. Stir well.
- Gradually add half of the flour, then the salt and the remaining flour. Knead until you get a smooth, soft, and elastic dough.
- Place the dough in a greased bowl (grease the dough as well) and cover it with a lid or foil. Let it rise at room temperature for 1 hour.
Preparing the Filling:
- While the dough is rising, in a large bowl, combine the eggs with the crumbled feta cheese and mix well.
Shaping the Tutmanik:
- After 1 hour, lightly knead the dough. Divide it into 3 equal parts and form 3 balls.
- Roll out each ball to the diameter of the pan you will be using (mine is 34 cm).
- Grease the pan with oil.
- Place the first layer in the pan, sprinkle it with half of the cheese and half of the butter.
- Place the second layer, sprinkle it again with cheese and butter.
- Finally, place the third layer on top.
- Prick the tutmanik with a fork in a few places.
Rising and Baking:
- Cover the tutmanik with a towel or foil and let it rise for another 30 minutes.
- After 30 minutes, combine the yolk with 1 tbsp milk, whisk well, and brush the tutmanik.
- Bake in a preheated oven at 180°C (350°F) without a fan on the lowest rack for about 40-50 minutes.
Serving:
- After removing from the oven, cover the tutmanik with a towel for a few minutes before slicing it into pieces.
- I recommend serving it with a glass of cold ayran (yogurt drink).

Here are some additional tips:
- You can use any type of flour you like.
- If you don’t have dry yeast, you can use fresh yeast.
- You can add other flavors to the filling, such as chopped fresh herbs or diced tomatoes.
- To make the tutmanik even more golden brown, brush it with a beaten egg before baking.
- Leftovers can be stored in an airtight container at room temperature for up to 2 days.
Please note:
- The original recipe calls for baking the tutmanik on the lowest rack of the oven. You can also bake it in the middle of the oven if you prefer.
- The recipe also calls for serving the tutmanik with ayran (yogurt drink). You can also serve it with other beverages, such as tea or coffee.
