Recipe for: Easy and Delicious Tutmanik
Ingredients:
- 600 g (21.2 oz) sifted flour
- 300 ml (10.1 fl oz) warm fresh milk
- 100 ml (3.4 fl oz) warm water
- 50 ml (1.7 fl oz) oil
- 10 g (0.35 oz) sugar
- 7 g (0.25 oz) dry yeast
- 5 g (0.18 oz) salt
- 5 eggs
- 350 g (12.3 oz) Bulgarian cheese (similar to feta)
- 70 g (2.5 oz) butter (melted)

Instructions:
- In a large bowl, combine the water, sugar, and yeast. Stir to dissolve the sugar and let stand for 10 minutes to activate the yeast.
- After 10 minutes, add the fresh milk, oil, and 1 egg. Mix to combine. Gradually add half of the flour. When the dough starts to thicken, add the salt and the remaining flour. Knead until you have a smooth, soft dough. Place the dough in a pre-greased bowl. Cover with plastic wrap and let rise for 1 hour.
- While the dough is rising, prepare the filling. In a large bowl, combine the cheese and 3 eggs. Mix until well combined.
- After 1 hour, lightly knead the dough and divide it into 3 equal parts. Shape into 3 balls. Roll out the balls to a thickness of about half a centimeter. Grease the sheets with butter and the baking dish in which you will bake. Spread the filling evenly over the sheets. Roll the sheets into a roll and arrange them in the baking dish like a snail. Cover the baking dish with plastic wrap and let rest for 30 minutes.
- After 30 minutes, beat 1 egg and brush carefully on all sides.
- Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit), without a fan, in the lower part of the oven, for about 30-40 minutes.

Here are some additional tips:
- You can use any type of flour you like.
- If you don’t have dry yeast, you can use 25 g (0.88 oz) fresh yeast.
- You can add other ingredients to the filling, such as chopped nuts, raisins, or spices.
- To make the tutmanik even more delicious, brush it with melted butter after baking.
- Serve the tutmanik warm or at room temperature.
Please note:
- The original recipe calls for Bulgarian cheese, which is similar to feta cheese. If you can’t find Bulgarian cheese, you can use feta cheese or another type of salty cheese.
- The recipe also calls for baking the tutmanik in the lower part of the oven. This is because the cheese filling can be quite heavy and it needs to be cooked through evenly.
