Ingredients:

  • 3 zucchini, equal in size
  • 2 carrots, coarsely grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 250 g (9 oz) crumbled feta cheese
  • 2 eggs
  • A few sprigs of dill, finely chopped
  • Salt
  • Black pepper
  • Oregano

Instructions:

Preparing the Zucchini:

  1. Wash and dry the zucchini.
  2. Trim the ends.
  3. Cut each zucchini into 4 equal parts.
  4. Scoop out the insides of the zucchini using a teaspoon.
  5. Arrange the hollowed-out zucchini in a greased baking dish.
  6. Salt the zucchini and drizzle with olive oil.
  7. Bake in a preheated oven at 180°C (350°F) without the fan convection, on the bottom rack of the oven, for about 25 minutes.

Preparing the Filling:

  1. Finely chop the zucchini flesh.
  2. Heat olive oil in a skillet.
  3. Add the onion and carrots.
  4. Sauté for 1-2 minutes.
  5. Add the zucchini flesh and continue to sauté until softened.
  6. Add the garlic and stir.
  7. Turn off the heat and let the filling cool slightly.
  8. In a large bowl, combine the feta cheese, eggs, dill, and slightly cooled filling from the skillet.
  9. Season with salt, black pepper, and oregano.
  10. Mix well.

Filling and Baking:

  1. Fill the hollowed-out zucchini with the filling.
  2. Return the zucchini to the oven and bake for an additional 30 minutes.
