- 3 zucchini, equal in size
- 2 carrots, coarsely grated
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 250 g (9 oz) crumbled feta cheese
- 2 eggs
- A few sprigs of dill, finely chopped
- Salt
- Black pepper
- Oregano
- Olive oil

Instructions:
Preparing the Zucchini:
- Wash and dry the zucchini.
- Trim the ends.
- Cut each zucchini into 4 equal parts.
- Scoop out the insides of the zucchini using a teaspoon.
- Arrange the hollowed-out zucchini in a greased baking dish.
- Salt the zucchini and drizzle with olive oil.
- Bake in a preheated oven at 180°C (350°F) without the fan convection, on the bottom rack of the oven, for about 25 minutes.
Preparing the Filling:
- Finely chop the zucchini flesh.
- Heat olive oil in a skillet.
- Add the onion and carrots.
- Sauté for 1-2 minutes.
- Add the zucchini flesh and continue to sauté until softened.
- Add the garlic and stir.
- Turn off the heat and let the filling cool slightly.
- In a large bowl, combine the feta cheese, eggs, dill, and slightly cooled filling from the skillet.
- Season with salt, black pepper, and oregano.
- Mix well.
Filling and Baking:
- Fill the hollowed-out zucchini with the filling.
- Return the zucchini to the oven and bake for an additional 30 minutes.
