Ingredients:

For the dough:

  • 600 g (21 oz) all-purpose flour, sifted
  • 300 ml (10 fl oz) warm whole milk
  • 1 egg + 1 egg white
  • 100 g (3.5 oz) melted butter
  • 1 tablespoon sugar
  • 7 g (0.25 oz) active dry yeast
  • 1 teaspoon salt

For the filling:

  • 3 eggs
  • 250 g (9 oz) crumbled feta cheese

For brushing:

  • 1 egg yolk
  • 1 tablespoon whole milk

Instructions:

Activating the yeast:
  1. In a large bowl, combine the warm milk, sugar, and active dry yeast. Stir and let sit for 10 minutes, until the yeast is activated.
Making the dough:
  1. Add the egg, egg white, and melted butter to the activated yeast. Stir well. Gradually add the flour, mixing until a thick batter forms.
  2. Add the salt and continue adding flour until the dough is elastic and smooth.
  3. Shape the dough into a ball, place it in a greased bowl, cover it with a lid or plastic wrap, and let it rise at room temperature for 1 hour.
Making the filling:
  1. In a large bowl, whisk together the cheese and eggs until well combined.
Shaping:
  1. Divide the risen dough into 8 equal parts. Shape each part into a ball.
  2. Roll one ball into a circle, place some filling on one end, roll up into a log, pinch the ends to seal, and coil into a snail shape. Repeat with the remaining dough balls.
Second rise:
  1. Arrange the snail shapes on a baking sheet lined with parchment paper. Cover them with a clean kitchen towel and let them rise for another 30 minutes.
Baking:
  1. Preheat the oven to 180°C (350°F) without a fan.
  2. Whisk together the egg yolk and whole milk and brush the snail shapes with the mixture.
  3. Bake in the lower part of the oven for about 40 minutes.
Cooling and serving:
  1. Remove the snail shapes from the oven and let them cool slightly.
  2. Serve warm and enjoy!
