Ingredients:

  • 720 g (25.4 oz) sifted flour
  • 400 ml (13.5 fl oz) warm fresh milk
  • 2 egg whites
  • 1 egg yolk
  • 60 ml (2 fl oz) oil
  • 60 g (2.1 oz) butter (melted)
  • 100 g (3.5 oz) sugar
  • 11 g (0.39 oz) dry yeast
  • 5 g (0.18 oz) salt
  • 1/2 ampoule liquid vanilla
  • 200 g (7 oz) liquid chocolate
  • 1 egg yolk (for brushing)
  • 1-2 tbsp fresh milk (for brushing)

Instructions:

  1. In a large bowl, combine the fresh milk, sugar, and yeast. Stir to dissolve the sugar and let stand for 10 minutes to activate the yeast.
  2. After 10 minutes, add the two egg whites and one yolk, oil, and liquid vanilla. Mix to combine. Gradually add half of the flour, stirring constantly. Add the melted butter and salt. Gradually add the remaining flour. Knead until you have a smooth, soft dough.
  3. Transfer the dough to a pre-greased bowl. Cover with plastic wrap and let the dough rise for 1 hour.
  4. After 1 hour, lightly knead the dough and divide it into two equal parts. Shape into 2 balls. Roll out each ball into two large rectangles. Cut each rectangle into 6 equal pieces. Then cut each piece in half diagonally to make 24 long triangles. Place chocolate on each triangle. Roll up carefully. Place the buns on a baking sheet lined with parchment paper. Cover the baking sheet with plastic wrap and let rest for 30 minutes.
  5. After 30 minutes, whisk one egg yolk with one tablespoon of fresh milk and brush the buns.
  6. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit), without a fan, in the middle of the oven, for about 20-25 minutes.

  • You can use any type of flour you like.
  • If you don’t have dry yeast, you can use 25 g (0.88 oz) fresh yeast.
  • You can add other ingredients to the filling, such as chopped nuts, raisins, or cinnamon.

  • Serve the buns warm or at room temperature.
