  • 500 g phyllo pastry sheets

  • 100 g butter (melted)
  • 300 ml sparkling water

Instructions:

  1. Grease a baking dish with butter. I used a 34 cm diameter dish.
  2. Place two sheets of phyllo pastry in the bottom of the dish. Sprinkle with cheese and add one more sheet. Add some butter and another sheet. Continue with cheese, pastry, butter, pastry, cheese, and so on until you run out of pastry sheets.
  3. Cut the layered pastry into 8 pieces.
  4. Add the eggs and yogurt to the sparkling water. Beat with a wire whisk until well combined.
  5. Pour the mixture evenly over the pastry.
  6. Bake in a preheated oven at 180 degrees Celsius, without a fan, in the lower part of the oven, for about 50 minutes.
  7. Enjoy!

Tips:

  • You can use any type of cheese you like, such as feta cheese or mozzarella cheese.
  • If you don’t have sparkling water, you can use regular water.
  • You can also add other ingredients to the filling, such as spinach, mushrooms, or meat.
  • Serve the banitsa warm or cold.

Note:

This recipe is for a traditional Bulgarian banitsa. There are many different variations of this recipe, so feel free to experiment and find your favorite version.
