Instructions:
- Add the baking soda to the yogurt and stir until it fizzes.
- In a bowl, combine the flour, salt, sugar, and dry yeast. Mix well.
- Make a well in the center of the flour mixture.
- Pour in the yogurt with baking soda, oil, and egg.
- Stir and knead until a smooth, soft dough forms.
- Shape the dough into a ball and place it in a greased bowl.
- Cover the bowl with a lid or plastic wrap.
- Let the dough rise for 2 hours at room temperature.
- After 2 hours, lightly knead the dough and transfer it to a lightly floured surface.
- Divide the dough into 16 small balls.
- Lightly roll out each ball and place some crumbled cheese on one end.
- Fold the mekitsa over to enclose the cheese and press gently with your fingers.
- Arrange the prepared mekitsa on a board or tray.
- Heat the oil for frying over medium heat.
- Fry the mekitsa until golden brown on both sides.
- Serve warm and sprinkle with powdered sugar, if desired.
