Ingredients:
- 2.2 lbs (1 kg) pork shoulder, cut into cubes
- 5 red bell peppers, coarsely chopped
- 2 onions, thinly sliced
- 7 oz (200 g) canned crushed tomatoes
- 10.6 oz (300 g) rice
- 1 bunch parsley, chopped
- Salt
- Black pepper
- Red pepper
- Olive oil

Instructions:
- Heat a little oil in a large pot over medium heat.
- Add the pork cubes and cook for 7-8 minutes, until browned on all sides.
- Add the onions and cook for 1-2 minutes, until softened.
- Stir in the bell peppers and cook for 2-3 minutes.
- Add the crushed tomatoes, rice, and half of the parsley.
- Season with salt, black pepper, and red pepper. Stir to combine and remove from the heat.
- Transfer the mixture to a clay pot or baking dish.
- Add 1 liter (4 cups) of water and stir to combine.
- Place the pot in a cold oven and set the temperature to 180°C (350°F) without the fan. Bake for about 50-60 minutes.
- Once baked, sprinkle with the remaining parsley and serve.
