Ingredients:

  • 2.2 lbs (1 kg) pork shoulder, cut into cubes
  • 5 red bell peppers, coarsely chopped
  • 2 onions, thinly sliced
  • 7 oz (200 g) canned crushed tomatoes
  • 10.6 oz (300 g) rice
  • 1 bunch parsley, chopped
  • Salt
  • Black pepper
  • Red pepper
  • Olive oil

Instructions:

  1. Heat a little oil in a large pot over medium heat.
  2. Add the pork cubes and cook for 7-8 minutes, until browned on all sides.
  3. Add the onions and cook for 1-2 minutes, until softened.
  4. Stir in the bell peppers and cook for 2-3 minutes.
  5. Add the crushed tomatoes, rice, and half of the parsley.
  6. Season with salt, black pepper, and red pepper. Stir to combine and remove from the heat.
  7. Transfer the mixture to a clay pot or baking dish.
  8. Add 1 liter (4 cups) of water and stir to combine.
  9. Place the pot in a cold oven and set the temperature to 180°C (350°F) without the fan. Bake for about 50-60 minutes.
  10. Once baked, sprinkle with the remaining parsley and serve.

  • You can also add other vegetables to the gyuvech, such as carrots, zucchini, or eggplant.
