- 1 egg
- 1/2 onion, finely chopped

- 2 carrots, finely chopped
- Stems from 1/2 bunch parsley, finely chopped
- 2 potatoes, cut into small cubes

- 14 oz (400 g) plain Greek yogurt
- 1 egg yolk
Seasonings:
- Salt
- Black pepper
- Paprika
- Savory

Instructions:
Prepare the Meatballs:
- In a large bowl, combine the ground beef, onion, breadcrumbs, rice, and egg.
- Season with salt, black pepper, and paprika.
- Mix well and form small meatballs.
- Roll the meatballs in flour.
Prepare the Soup Base:
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the onion, carrots, and parsley stems.
- Sauté for a few minutes.
- Add cold water and bring to a boil.
- Add the potatoes and season with salt, black pepper, and savory.
- Simmer the soup over medium heat for 10 minutes.
Add the Meatballs:
- Shake off any excess flour from the meatballs and add them to the soup.
- Simmer for another 15 minutes.
Add Rice and Parsley:
- After 15 minutes, add the rice and half of the chopped parsley.
- Stir and cook for an additional 15 minutes.
Prepare the Roux:
- In a large bowl, whisk together the Greek yogurt and egg yolk.
- Whisk until well combined.
Thicken the Soup:
- Gradually add ladlefuls of the soup broth to the yogurt mixture, whisking constantly.
- Pour the roux into the soup, stir, and bring to a simmer.
- Turn off the heat.
Serving:
- Garnish with the remaining parsley.
- The soup is ready to serve!
