Ingredients:

  • Ground meat – 500 g (1.1 lbs)
  • Potatoes – 4 (cut into cubes)

Easy and Flavorful Spanakopita

Instructions:

Season the ground meat:

  1. In a bowl, combine the ground meat, half of the finely chopped onion, egg, breadcrumbs, and parsley. Season with salt, black pepper, and paprika. Mix well until all ingredients are combined.

Shape the meatballs:

  1. Shape the ground meat mixture into meatballs about 50 grams (1.7 oz) in size. Dredge them in flour.
  2. In a preheated pan with oil, fry the meatballs on both sides until golden brown. You don’t need to fry them all the way through, just until they firm up.

Prepare the vegetables:

  1. In a saucepan with oil, sauté the onion, carrots, and bell peppers for 2-3 minutes, until softened.
  2. Add the canned tomatoes, potatoes, 500 ml (17 fl oz) of water, salt, black pepper, and paprika. Stir and bring to a boil.
  3. Once the dish boils, add the meatballs and distribute them evenly. Reduce the heat and simmer on low heat until the potatoes are cooked through, about 40 minutes.

Garnish the finished dish with finely chopped fresh parsley.
