Ingredients:

  • 3 chicken thighs, washed, cleaned, and cut in half
  • 2 onions, thinly sliced
  • 3 carrots, julienned
  • 1 red bell pepper, julienned
  • 2 potatoes, cut into large cubes
  • 10.5 oz (300 g) mushrooms, coarsely chopped
  • 4 cloves garlic, thinly sliced
  • 1/2 bunch parsley, finely chopped
  • 3.4 fl oz (100 ml) white wine
  • 3.4 fl oz (100 ml) water
  • 1.7 oz (50 g) butter
  • Salt
  • Black pepper
  • Thyme
  • Olive oil

Instructions:

  1. Heat oil in a pot over medium heat.
  2. Add the chicken thighs and sear on all sides for about 2-3 minutes.
  3. Remove the chicken from the pot.
  4. Add the onions, carrots, bell pepper, and mushrooms to the pot.
  5. Stir and sauté the vegetables for 5-6 minutes under a lid, stirring occasionally.
  6. Add the potatoes, garlic, parsley, salt, black pepper, and thyme.
  7. Stir and turn off the heat.
  8. Transfer the mixture to a baking dish.
  9. Return the chicken to the baking dish.
  10. Season the chicken with salt and black pepper.
  11. Add the butter, white wine, and water.
  12. Cover the baking dish with aluminum foil.
  13. Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, for about 50 minutes.
  14. Remove the foil and return the baking dish to the oven to brown.
  15. Bake for an additional 10-15 minutes, or until the chicken is golden brown.
