Instructions:
- Heat oil in a pot over medium heat.
- Add the chicken thighs and sear on all sides for about 2-3 minutes.
- Remove the chicken from the pot.
- Add the onions, carrots, bell pepper, and mushrooms to the pot.
- Stir and sauté the vegetables for 5-6 minutes under a lid, stirring occasionally.
- Add the potatoes, garlic, parsley, salt, black pepper, and thyme.
- Stir and turn off the heat.
- Transfer the mixture to a baking dish.
- Return the chicken to the baking dish.
- Season the chicken with salt and black pepper.
- Add the butter, white wine, and water.
- Cover the baking dish with aluminum foil.
- Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, for about 50 minutes.
- Remove the foil and return the baking dish to the oven to brown.
- Bake for an additional 10-15 minutes, or until the chicken is golden brown.
