Instructions:
- Place the chicken in a large pot.
- Add cold water to cover the chicken.
- Place the pot over high heat and bring to a boil.
- Skim off any foam that forms on the surface.
- Season the broth with salt, black peppercorns, and bay leaves.
- Reduce heat to medium and simmer for about 40 minutes.
- Remove the chicken from the pot and set aside to cool.
- Strain the broth into another pot.
- Return the pot to the stovetop and bring the broth to a boil.
- While the broth is coming back to a boil, caramelize the onions:a. Heat oil in a skillet over medium heat.b. Add the onions and cook until caramelized and golden brown on all sides.
- Once the broth is boiling, add the parsley stems, celery, carrots, and potatoes.
- Stir and cook the vegetables for about 20 minutes.
- Meanwhile, shred or chop the cooled chicken meat.
- After 20 minutes, add the bell peppers, caramelized onions, and shredded chicken to the soup.
- Stir and cook for an additional 10 minutes.
- After 10 minutes, season with salt to taste and add the tomatoes.
- Stir in half of the chopped parsley.
- Bring the soup to a simmer, then turn off the heat.
- Garnish with the remaining chopped parsley and serve immediately.
