Ingredients:

  • 1 whole chicken (about 2.5 lbs)
  • 2 onions, sliced
  • 2 carrots, sliced
  • 3-4 celery stalks, roughly chopped
  • 1 red bell pepper, roughly chopped
  • 3-4 potatoes, roughly chopped
  • 5.3 oz (150 g) canned peeled tomatoes, roughly chopped
  • Parsley stems from 1/2 bunch, finely chopped
  • Parsley leaves from 1/2 bunch, finely chopped
  • Salt
  • Black peppercorns
  • 2 bay leaves

Instructions:

  1. Place the chicken in a large pot.
  2. Add cold water to cover the chicken.
  3. Place the pot over high heat and bring to a boil.
  4. Skim off any foam that forms on the surface.
  5. Season the broth with salt, black peppercorns, and bay leaves.
  6. Reduce heat to medium and simmer for about 40 minutes.
  7. Remove the chicken from the pot and set aside to cool.
  8. Strain the broth into another pot.
  9. Return the pot to the stovetop and bring the broth to a boil.
  10. While the broth is coming back to a boil, caramelize the onions:a. Heat oil in a skillet over medium heat.b. Add the onions and cook until caramelized and golden brown on all sides.
  11. Once the broth is boiling, add the parsley stems, celery, carrots, and potatoes.
  12. Stir and cook the vegetables for about 20 minutes.
  13. Meanwhile, shred or chop the cooled chicken meat.
  14. After 20 minutes, add the bell peppers, caramelized onions, and shredded chicken to the soup.
  15. Stir and cook for an additional 10 minutes.
  16. After 10 minutes, season with salt to taste and add the tomatoes.
  17. Stir in half of the chopped parsley.
  18. Bring the soup to a simmer, then turn off the heat.
  19. Garnish with the remaining chopped parsley and serve immediately.
