Instructions:
- Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on all sides.
- Sauté vegetables: Remove the chicken from the skillet and set aside. Add the onion, carrots, and bell peppers to the skillet and cook for 3-4 minutes, or until softened.
- Combine ingredients: Add the rice to the skillet and cook for 2 more minutes. Transfer the rice mixture to a baking dish.
