Ingredients:

For the dough:

  • 600g all-purpose flour
  • 200ml milk (room temperature)
  • 100ml lukewarm water
  • 1 egg
  • 3 tablespoons oil
  • 1 tablespoon yogurt
  • 7g dry yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar

For the filling:

  • 150g crumbled feta cheese

For the topping:

  • 100g butter
  • 40ml milk
  • 30g breadcrumbs
  • Oil for greasing

Instructions:

Activate the yeast:

  • In a small bowl, combine the lukewarm water, sugar, and yeast. Let it sit for 10 minutes to activate.

Prepare the dough:

  • In a large bowl, whisk together the flour and salt.
  • Create a well in the center and add the milk, activated yeast, egg, yogurt, and oil.
  • Knead the dough until smooth, soft, and slightly sticky.
  • Shape the dough into a ball, grease it with oil, and place it in a greased bowl. Cover and let it rise in a warm place for 1 hour.

Shape the rolls:

  • Once the dough has risen, punch it down and divide it into 3 equal parts.
  • Roll each part into a long rope and cut it into 10 equal pieces.
  • Arrange the dough balls in a greased baking sheet (34 cm in diameter) and evenly distribute the feta cheese among them.
  • Cover the baking sheet with a clean cloth and let it rise for another 30 minutes.

Prepare the topping:

  • In a saucepan, melt the butter and add the breadcrumbs. Cook for 30-40 seconds, stirring constantly.
  • Gradually add the milk, stirring continuously until the mixture becomes creamy.

Bake:

  • Brush the mini bread rolls with the topping and bake in a preheated oven at 180°C (350°F) for about 30-35 minutes, or until golden brown.

Serve:

  • Let the mini bread rolls cool slightly before serving. They should be soft and fluffy on the inside and crispy on the outside.
