Instructions:
- Prep the vegetables: Finely chop the bell peppers and parsley.
- Blanch the tomatoes: Remove the green stems from the tomatoes. Blanch the tomatoes in boiling water for 15 seconds, then transfer to ice water.
- Peel the tomatoes: Peel off the skins of the tomatoes.
- Combine ingredients: Chop the tomatoes into small pieces. Combine the tomatoes, bell peppers, parsley, and salt in a large bowl. Mix well.
- Pack into jars: Pack the mixture tightly into clean jars, leaving a small amount of space at the top.
- Seal the jars: Seal the jars with lids.
- Process the jars: Place the jars in a large pot with a cloth on the bottom. Cover the jars with water, ensuring the water level is about an inch above the lids.
- Boil: Bring the water to a boil and process for 15 minutes.
- Cool: Remove the jars from the pot and place them upside down on a towel-lined surface to cool.
- Store: Once completely cool, store the jars in a cool, dark place.
